How to Pickle Chillies: A Step-by-Step Guide

If you're someone who loves spicy food, then pickled chillies are a must-try for you. Not only do they add an extra punch of flavor to your meals, but they also have a longer shelf life than fresh chillies. In this article, we will guide you through the process of pickling chillies at home. It's easy, quick, and can be done with just a few basic ingredients.

What You'll Need:

  • Fresh chillies (preferably red or green)
  • Vinegar (white or apple cider)
  • Water
  • Sugar
  • Salt
  • Jar with a tight-fitting lid

Step 1: Prep the Chillies

Wash the chillies thoroughly and dry them using a clean towel. Remove the stem from each chilli and slice them into small pieces. The size of the pieces depends on your preference. If you like them chunky, keep the pieces bigger, and if you prefer them more finely chopped, make them smaller.

Step 2: Mix the Brine

In a saucepan, combine equal parts vinegar and water. Add in sugar and salt to taste. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar and salt dissolve completely. Turn off the heat and let it cool down to room temperature.

Step 3: Pack the Jar

Pack the sliced chillies tightly into the jar. Pour the cooled brine mixture over the chillies, making sure that they are completely submerged. Leave some headspace at the top of the jar, about half an inch or so.

Step 4: Seal the Jar

Seal the jar with a tight-fitting lid. Shake the jar gently to distribute the brine evenly. Store the jar in a cool, dark place, like a pantry or a cupboard. Let the chillies pickle for at least a week before using them. The longer they sit, the better they will taste.

Step 5: Enjoy!

Once the pickled chillies are ready, use them to spice up your favorite dishes. They go well with sandwiches, burgers, tacos, and even pizza. You can also use the leftover brine as a dressing for salads or marinade for meats. Experiment with different types of chillies and ratios of vinegar and water to find your perfect pickling recipe.
